
I guess I was a “Bourdanian” even before I knew who he was. I am Korean and my mother was a culinary instructor and grew up poor. Good food was one of the few “rights” and “pleasures” we (my brother and I) felt entitled to (my brother is now a Chef). My take on food has very much the same “f___ you” perspective as many of my heros like David Chang - it is not “puzzlematic” doesn’t have to fit into a certain cube or genre - it’s good food bore (anthropologically) mostly out of necessity/need and continued eating it because it taste good and is satiating to one’s soul. You ever wonder why Asians perspire whenever adventurously eating?
These types of eats can be found at a table of a James Beard winner or the local taco truck. I usually prefer the local taco truck. If only there was a decent one close to me …
